The best suppliers can tell you exactly where your coffee comes from: the country, region, farm or cooperative, variety and processing method. Direct relationships with producers usually mean better quality control, more consistent supply and fairer prices for farmers.
Traceability is also a story you can share with guests. A menu line about a Colombian washed lot or a natural Ethiopian coffee adds real value to your offer.
